With SO much interest in my old-fashioned, no pectin added, gourmet preserves, we’ve started ‘putting-up’ jars in limited quantities to sell on a first-come first-served basis.

~ As expected, the cooked lychee slices are chewy, so I added diced Meyer Lemon rind along with the juice as a chewy complement. Since the fruit pieces stayed intact, this jam is considered a conserve.

The lemon rind was a tad too strong freshly made. Similar to fine wines & perfumes, preserve flavors change quite a bit within a month ~ or three ~ depending on the ingredients. The lemon rind mellowed and the fragrant lychee-ness is recognizable. Experimental folks with sophisticated palates, who like exotic tropical flavors and marmalade, will like this conserve.
