The Fairy Tale eggplants from Crescent Moon Farm have been so delicious, I buy them every week. Crescent Moon also grows my favorite sweet pepper – bright red lipsticks. Lipstick peppers are a pimento type pepper with thick, sweet flesh. I decided to do something simple with them to let them really shine in their own goodness.
No adulteration.
Super simple, and ready in 20 minutes, they roast up quick and delicious. Preheat oven to 400 degrees and grab a big baking dish or short sided cookie sheet. Cut about a pound of fairy tale or other small eggplant, in half or bite sized pieces. Do the same with your favorite sweet pepper. Peel 6 or so cloves of pungent garlic. Toss them all in the baking dish with 2 or 3 tablespoons of good olive oil and a few dashes of salt. Roast for about 20 minutes until the veggies are fragrant, soft and caramelized.
They are delicious right out of the oven, or room temperature, so it makes a great vegan or vegetarian side dish for any type of meal. Enjoy these summer beauties while you can!
