Okay, so I was really torn deciding what to enter into the Best of 2007 Foodblogger’s Recipe Collection. I was going a little too far down the “pick a winner” path, than felt comfortable. I loved how the Guava Lime Cheesecake Ice Cream turned out with the texture of the cream cheese and the exotic flavors of the tropics. So, it would make sense to enter the ice cream, and I would be proud of it, but when I really think about who I am, and how I want to represent myself as a cook…it’s the Roasted Garlic Mashed Potatoes with Carrot Flecks and Dill that feels right.
As I was mulling it over with Marc, I realized that the nourishing comfort food of potatoes with creamy dairy and extra veggies actually typifies my cooking style. My love of vegetables showcased in a tasty way, is what I choose for this food blogging contest. So, even if it doesn’t win, I know I put my best dish (this year) forward.

i think you should make a pile of these potatoes and bronze them and keep them in your house, so that you will forever have them as a reminder of your unique way of creating absolutely delicious things that have a big heaping of healthy ingredients and your special ingredient ( i think we all know what that is by now). 🙂
